Low Fat Alfredo Sauce Recipe

Making a low fat Alfredo sauce is a tough undertaking. Fettuccine Alfredo is essentially a simple dish with a few high fat ingredients. My advice to people looking for a homemade low fat Alfredo sauce recipe is to be content with limiting your consumption of Fettuccine Alfredo to a handful of special occasions each year.

But if you insist on having Alfredo sauce more often, here's a version with less than half the calories and fat of the traditional version.

Light Alfredo Sauce Recipe

Ingredients

  • 3/4 cup of half and half
  • 1 teaspoon cornstarch
  • 1 cup of Parmesan cheese
  • Fettuccine

Combine the half and half with the cornstarch and bring to a simmer until it thickens.  Set it aside.

Cook the pasta, drain it, and save some of the pasta water.

Put the sauce over low heat and add a little bit of the pasta water, maybe 1/2 cup. Add the Parmesan cheese to the half and half until it melts and combines. Toss with the pasta and serve.

You'll notice that this low calorie Alfredo sauce recipe eliminates the butter from the dish and replaces the cream with half and half. That's where the calories get saved. The cornstarch thickens the sauce.

The better the quality of the cheese you use, the better this dish will taste.
